Gordon Ramsay's Apple Pie
Pastry
- 1 3/4 cup flour (200g)
- 7 tablespoons of castor sugar (90g)
- 1/2 cup of unsalted buter (4oz / 115g)
- 1 x large egg
Directions
- Mix Butter and Sugar
- Add egg and mix for 30 sec
- Add flour and mix (don't over mix)
- Knead into a dough - cut in half and cover in clingfilm and place in fridge (at least 30 mins)
Apple Filling
- 4 Large Cooking Apples (e.g. Bramley) - peeled, cut into big chunks (1350 g)
- 1/2 cup of caster sugar (100g)
- 4 tablespoons of unsalted butter (2oz / 57g)
- 1 egg yolk (mixed with 2 teaspoons of water)
- 1/2 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg (freshly grated)
Directions
- Mix sugar, cinnamon and nutmeg
- Put 1/2 of apples in a bowl and use 1/2 of the sugar mixture and cover / mix
- Cook in pan with 1/2 of the butter and then place in a bowl to cool
- Repeat with other half
- Cool in fridge.
Bake in Oven at 160 Degrees Celius for 35-40 mins
